Greek Chicken Salad Recipe

During the summer months it seems like there a few standard recipes that we all fall back on. Chicken salad is one of these recipes. The standard chicken salad can get a little old so I like to play with it every now and then. I hope you enjoy this greek inspired version!




Greek Chicken Salad
(Serves 4)

Ingrediants:
  1. 4 Lg Chicken Breasts
  2. 2 cups Plain Greek Yogurt (it needs to be greek yogurt)
  3. 1 medium English Cucumber, 1/2 the cucumber cut into chunks and 1/2 chopped
  4. 1/2 Yellow Onion, chunks
  5. 1 Lemon
  6. 4 TBS Olive Oil
  7. 2 Garlic Cloves, minced
  8. 1/4 cup Feta Cheese (more if you really like feta!)
  9. 1 pkge Cherry Tomatoes
  10. 1 tbs Dried Oregano
  11. Salt and Pepper

Instructions:

The first thing you want to do is marinate your chicken. I try to marinate mine for about an hour but the longer the better. Squeeze 1/2 your lemons juice into a bowl with garlic, olive oil, salt, pepper and oregeno. Mix it together and add your chicken. Stick meat in the fridge.

While your chicken is marinating blend together cucumber chunks, your onion, yogurt, 1/2 your lemon worth of juice and a little salt and pepper. Taste your sauce and add more onion, lemon, cucumer or yogurt to your taste preferences. Stick tatziki sauce in the fridge.

When your ready, put your chicken on the grill (broiling works great too). After your chicken is cooked, put in the fridge to cool.

While chicken is cooling chop up the other half of your cucumber, slice your tomatoes and crumble up your feta cheese into your salad bowl. Poor in desired ammount of tatziki sauce and mix together. When chicken is cooled, cut into bite sized chunks and add to your tatziki mixture.

You can eat this immediately, or put it in the fridge and let the flavors get to know each other a little bit better. I like to eat this plain, wrapped in lettuce, on top of lettuce, on a kaiser roll or in a pita. I think it would also be delicious tossed with some noodles for a light chicken pasta salad.  The possibilities are endless! This is such a fresh tasting chicken salad. I absolutely love it!

This actually sounds pretty good but I wasn't fond of the Greek yogurt when I tried it plain..

I am not a fan of plain greek yogurt either. It gives the tatziki the right consistancy though and really compliments the flavor of the other ingrediants :)I hope you enjoy it!
