Rocky Mountain Pancakes
6 eggs
1 c flour
1 tsp salt
1 c milk
1 tsp vanilla, cinnamon, nutmeg... optional
9 x 13 inch pan
2 tbs butter
Place butter in your baking pan and put it in the oven at 375. The butter will melt while preheating. This is really the best way to ensure it doesn't stick, I have found it better than just rubbing it onto the pan.
In a mixing bowl combine flour, salt and spices if your using them. Add in milk and mix together. When combined add eggs and mix again. There will be small lumps, this is fine.
Take pan out of the oven and move around to spread the butter. Poor batter directly into pan and place into the oven. Bake for about 20 minutes or until batter is firm. It should have lots of mountains in it. These will mostly deflate a few minutes after removing from the oven.
Serve up with syrup or powdered sugar!

I thought this was going to involve Rocky Mountain oysters. I was very pleased to see something much more yummy!
My wife makes something I believe is the same, called Pannekoeken. They're also called Dutch Babies and Swedish Pancakes. We love them with powdered sugar.
