Quick and Easy Side Dish - Spiced Sweet Potatoes

Side dishes are always the hardest for me to plan. I can never decide what will go with what and I get tired of the same thing over and over. I usually just make roasted potatoes, mashed potatoes and some random steamed or raw vegetable. I wanted to do something a little more interesting so decided to play with the sweet potatoes in the pantry. This isn't anything special, it is incredibly simple and the recipe is almost unnecessary but I am writing it anyway. We can all use more ideas for side dishes right?

Spiced Sweet Potatoes
(Serves 3)

2 lg Sweet Potatoes, peeled and cubed
1 tbs Pumpkin Pie Spice (or apple pie or a mix of cinnamon, clove and nutmeg)
1 tsp Salt
1 tsp Pepper
Olive Oil

Preheat oven to 385 degrees.
Peel and cube your sweet potatoes. In a large bowl drizzle with just enough olive oil to coat your potatoes. 


Once coated, sprinkle with salt, pepper and spices. Stir until everything is nicely coated. If you wanted to make this a little more "special" you could also drizzle in a smidge of maple syrup or vanilla at this point. Poor onto a roasting pan and place in the oven.


 Roast for 45 minutes or until tender, stirring occasionally. 

Thats it! We all loved it, it wasn't too sweet or spicy. Just enough spice to make the potatoes extra special. Enjoy!
