1 Package Flour Tortillas
Oil of choice for Frying
Cut the flour tortillas like a pizza into either 6 or 8 pieces. I like the smaller pieces if feeding a crowd of kids because it doesn't waste as much.
Heat your oil in a skillet until it is warm. Add the wedges of tortillas a few at a time and fry just until they are golden brown. It will happen fast so watch them very closely. You might need to turn them over once as well to brown each side.

Remove the new golden brown wedges and drain for just a moment on a paper towel.
While still warm, dip them into the bowl of cinnamon and sugar and make sure to coat thoroughly.
Store in an air tight container these chips will keep for several days but are freshest and best served the same day. But, as with most things, my children don't mind them later and will grab these as a quick snack as long as they stay around.
Cream Cheese "Cheesecake Dip"
1 package cream cheese
1 tablespoon brown sugar
Combine all of the above ingredients until very smooth and chill until ready to serve. This dip is super easy to make and yet very versatile and tasty! It is great with these cinnamon chips but also with chocolate or honey graham crackers, fruit, or even angel food pieces.
